Photographic Memory


Slow and steady wins the race, right?

Although the seasons are quickly changing and I often wonder where the time goes. We're often reminded to make the most of our time and enjoy every minute of it. I am thankful for every day and for the opportunity to make it what I want.

To those of you celebrating Thanksgiving this weekend, I hope you're all lucky enough to spend time with your family, large or small, are blessed with good health and big appetites! I know I'll be carving into some turkey.

Current Crush: The Canadian Rockies


This past weekend I went to Calgary on business and was lucky enough to spend Saturday driving through the Canadian Rockies of Lake Louise and Banff. The drive itself was half of the excitement, with every turn bringing a new view of the beautiful rockface and countryside.


The air in Calgary is so crisp and clear because of it's high altitude and of course who wouldn't enjoy the fresh mountain air.



There are sulpher hot springs in Banff that you can actually see steaming out of the rocks.


Nature at its best.

This was my first time to Western Canada. Has anyone else ventured out to the mountains? What is the nicest piece of scenery in your area?

I'm Back...and Pinning.

I hope everyone is off to a good start this week. I can't complain since this was some of the scenery from my weekend.


I am back from Calgary. I will devote a post to my trip and the amazing mountain views but for now I am trying to get back to normal life and work.

I did have some amazing beef out West and some delicious soups to warm me up on those cold nights. I've pinned some nice fall soups that will work their way into my kitchen as the temperature continues to drop.

Roasted Parmesan Green Beans

 
I recently made Roasted Parmesan Greens Beans as a delicious side dish to my Roasted Red Pepper Infused Chicken Meatballs. The combination was perfect and I could not believe how easy this was. Gourmet made easy.


Wash and trim your Green Beans.


Melt a small amount of Coconut Oil to dip your Green Beans into.
Grate enough Parmesan Cheese to coat Green Beans.

Preheat oven to 350 and bake until Green Beans are tender. Parmesan Cheese will be melted and possibly crispy at that time. You can sprinkle some fresh Parmesan Cheese on top just before serving.


Other recipes might call for salt, pepper, garlic, etc. however my sister recommended the coconut oil and the flavour was beautiful.
